We dry-age our own fish and fry it at 170°C
We specialise in dry-ageing fish. Using locally sourced Thai catch, we age every fish ourselves, in-house — for intensely flavourful dishes. We cooked at different temperatures to find the perfect one: 170°C gives a fluffy inside and a crispy outside.
